The most important thing about this account: one venue record runs two different restaurants. A Japanese menu and a Chinese menu called Goldfish, sharing one drinks list, one set of tables and two kitchens. Almost everything below follows from that. Read section 3 before answering anything about the menu.

1. Account shape
Verdict: a single standalone restaurant with table service over three floors. Nothing shared, nothing inherited.
No organisation link, so nothing here is pushed from a parent and nothing is shared with another venue.
Trading today. 14,304 orders since December 2023, but only 545 in the last 90 days. That is a low-cover, high-value restaurant rather than a quiet one, and it is the opposite shape to a counter operation: a “we have had no orders for an hour” report here is far less alarming than the same report at a food hall.
Every order this venue has ever taken is a till order. There are no online orders at all, in the whole history of the account. Deliveroo is handled as a till tab, not through Dines online ordering. See section 4.
2. What is live and what is dormant

3. Two restaurants on one record
Verdict: the menu splits into a Japanese range and a Chinese range called Goldfish, with a shared drinks list. Only the Goldfish range is on a specific menu. Everything else is on none.

The venue is on its third menu generation. The original omakase categories (Counter Omakase, Maki, Sushi, INÉ Special Menu, Karuto) stopped selling in May and August 2026 and are no longer live categories, though they remain in sales history. If a caller asks about Karuto or Counter Omakase, those are retired.
The specific menu covers Goldfish only
A specific menu is a display filter. A till set to show a specific menu renders only the categories linked to that menu, and a category is never linked automatically when it is created.
There is exactly one specific menu, Goldfish Menu, and it carries the eleven Chinese categories and nothing else. All thirteen other live categories are on no specific menu, including every Japanese food category and every drinks category.
So a till set to Goldfish Menu shows the Chinese food and no drinks at all. That is worth checking rather than assuming: either a second till handles drinks and the Japanese menu, or no till is filtering and the setting is dormant.
Which tills filter cannot be confirmed centrally. The device-to-menu assignment is recorded centrally for only 19 venues across the estate, against 466 that have specific menus, and this venue has no rows. The setting lives on the device, so the central record is silent here and its silence proves nothing. It has to be checked on the iPad. This is the same class of blind spot as local printers.
Conventions
No timed categories. Nothing appears or disappears by time of day, including the Lunch category, which is on the Goldfish menu but carries no schedule.
VAT is uniform. Every one of the 483 live items is 20%. No zero-rated item.
No item carries an internal name, so there is no condensed printing name anywhere and every ticket shows the full customer-facing item name. Renaming an item changes what the kitchen sees.
106 modifier sets, none of them required. No item can block a sale by demanding a choice.
No item carries a default course, and no printer here uses the coursing gate, so no coursing rule applies anywhere.
4. Printing and kitchen routing
Verdict: the two kitchens are separated by prep station, not by table. Which floor a guest sits on does not change where their food prints.

The three receipt printers are all set never to print automatically. They exist to be printed to by hand when a guest asks for a receipt. “Receipts are not printing automatically” is the intended behaviour at all three.
Pass is the only printer that reads item type: it carries items typed Food and nothing else. So changing an item from Food to Drink takes it off the Pass ticket.

The INÉ / Goldfish split is done here and nowhere else. The station descriptions say so outright: “INE Food Categories Only” and “Goldfish Food Categories Only”. Japanese food prints upstairs, Chinese food prints downstairs.
Because both stations link whole categories rather than individual items, adding an item to a category puts it on the right kitchen printer automatically. Nobody has to touch a prep station to change what prints. That is also the trap: put a new Japanese dish in a Goldfish category and it prints in the wrong kitchen.
Three stations have no printer and work as kitchen-screen sections only. A caller reporting that one of those “is not printing” is describing intended behaviour.
Routing by table
Five of the six slot categories — Counter, Front, Back, Upstairs and Misc — link the same eight printers. So a guest’s table does not change where anything prints; the prep stations do all the separating. 31 slots, every one in a category, so no order falls back to printing everywhere.
Deliveroo Tab is the exception, linking only four printers: Deliveroo Food Prep (Downstairs), Kitchen (Downstairs), Kitchen (Upstairs) and Pass. No customer receipt and no Drinks printer.
Manual printing ignores all of this
Any member of staff can send any order to any printer profile by hand. So “it does print sometimes” does not prove the automatic routing works, and a ticket on an unexpected printer may be a person choosing it.
5. Till and EPOS settings
Verdict: the most locked-down of the settings we have looked at. PIN protection is on and it covers the money actions.

PIN protection here covers the actions that move money, unlike some venues where it only gates administration. The gated list includes refunds, voids, manual adjustments, removing the service charge, changing item quantities, bulk actions and closing early, as well as reporting, employees, roles and pay rates.
Force employee login is also on, so staff identify themselves at the till. Between the two, this venue has a considerably tighter till than a typical counter operation, and that is worth knowing before anyone suggests turning something off to make a task easier.
6. Remote configurations
Verdict: none. Nothing is pushed to this venue from a central config.
Every setting in this file was set on the account itself and nothing will be overwritten by a central push.
7. Discounts
Verdict: twelve codes, all active, and eight of them take the bill to zero. Zero-value bills are routine here and are not evidence of a fault.

None of the twelve is restricted to particular items, so each applies across the menu.
The prepaid omakase codes are how this venue handles prepaid covers. There is no Dines prepaid tab here; a guest who has paid in advance is rung through on the code matching their price point. That is why eight 100% codes exist and why a zero-value bill is normal.
Three things to check rather than assume:
DLV100’s end date passed in August 2025 while the code is still marked active. Whether an expired end date stops it applying is not verified — treat it as worth tidying rather than as a known live risk.
INEOMAKASEPREPAID130 carries both a 100% percentage and a fixed amount, which is an ambiguous configuration.
INEKARUTO10 refers to a range that no longer sells.
No vouchers, no redeemables, no prepaid tabs.
8. Gotchas at this venue
“A dish is printing in the wrong kitchen”
Almost always the category. Japanese categories feed the upstairs kitchen through the INE Food station, Chinese categories feed downstairs through Goldfish Food. A new dish put in a category belonging to the other range prints in the other kitchen. Check the item’s category before looking at printers.
“The till is not showing drinks”
The one specific menu, Goldfish Menu, carries the eleven Chinese food categories and nothing else. No drinks category is on it, and neither is any Japanese food. If a till is set to display that menu it shows Chinese food only. Check on the iPad which menu that device is set to. See section 3.
“Receipts are not printing automatically”
Correct and deliberate on all three receipt printers. They are manual-only.
“The prep station is not printing”
Three of the eight stations have no printer and are kitchen-screen sections. Ask which station before changing anything.
“The bill came to zero”
Eight active codes are 100%. Most are prepaid omakase or complimentary. Check whether a code was applied before treating it as a fault.
“The Pass ticket is missing an item”
Pass is the only printer here that reads item type, and it carries Food only. An item typed Drink or Other will not appear on it.
Miso Soup and White Rice fire more printers than anything else
Both are linked individually to three separate prep stations, so they behave differently from every other item on the menu. If someone reports duplicate tickets for those two, that is why.
Leftovers, none of them breaking anything
Deliveroo Orders is a prep station whose only link is to a deleted category, so it matches nothing, and it has no printer either. Basement Prep links two deleted categories alongside its eleven items. A deleted Dessert category exists alongside the live one of the same name, so be careful which one a record refers to. Several prep-station item links point at deleted items such as Carlingford Oyster and Pear Panna Cotta.

10. Coverage and confidence
Read directly from the records: account details and org links; order counts, dates and flows; every printer name, type, print-on-accept value, active flag and internal-name flag; all eight prep stations and all four kinds of link on each; every slot and slot category and its printer links; the specific menu and its category links; category, item, modifier and modifier-set counts; item types; VAT rates; the absence of category schedules; PIN protection state and its permission list; service charge; config-sync assignments; all twelve discount codes and their settings; voucher and prepaid-tab records; the absence of stock ingredients and recipes; category-level sales history back to December 2023.
Inferred, and flagged here as well as in the text: that INÉ and Goldfish are two concepts running side by side rather than a rebrand, which rests on both ranges selling in the same week and on the two prep stations being named and described separately; and that the prepaid omakase codes exist because there is no Dines prepaid tab here, which fits the names and the price points but has not been confirmed.
Not confirmed with the client: whether any till is set to the Goldfish menu, and what happens to drinks if one is; whether DLV100 being active past its end date matters; whether the Karuto code should be retired.
What this file cannot see at all:
Local printers. Printers connected to the till by network cable, USB or Bluetooth are configured on the iPad and appear in no central record. The routing above is complete for cloud printers and may be incomplete for the venue. A local printer also cannot serve a prep station, and five of the nine printers here are prep stations.
Which till displays which specific menu. Recorded centrally for only 19 venues estate-wide and not for this one. It has to be checked on the device.
Feature flags. A setting hidden by a flag looks identical to one that does not exist.
Intent. Every explanation of why something is set up a particular way is a reading, not a record.
